To rehydrate them, we recommend to put them soaking in the refrigerator for 24 hours, into a salad bowl covered with clingfilm. Do not throw away the water used for rehydration. Drain it through a strainer in order to clear it of its impurities and then boil it and skim it. You will obtain a delicious dashi of shiitake which you can enjoy either warm or cold.
Important : to be savoured, your shiitake must be previously cooked.
Our perfect combination : you can incorporate them in your salads, panfry your mushrooms, and accompany your stews (add them a few minutes before end of cooking), white rice and pastas/noodles…
