Koshu Junmai Ginjo Yamazaru Jukuseishu Rouen 2017 sake

The Yamazaru series developed by Brewer Nagayama Shuzo is identified as "Jizake", representative of "rich taste".

The water for making this sake is medium hard groundwater flowing from Akiyoshidai.
She transforms the excellent "Yamada Nishiki" sake rice, produced by local farmers, into high quality sake with aging ability.
This Junmai Ginjo sake is aged for 3 years: 2 years naturally in enamel vats in a brick cellar then, one year in bottle.
With its round notes of vanilla and maple, this sake leaves a sweet sensation in the mouth with a pronounced, very greedy aftertaste.
The palate is rich, complex, sweet. When reheated, the taste of umami increases and it becomes sweeter.

Perfect pairings : this sake will be perfect for tasting a miso stew, a game stew, a rabbit or a hare in a casserole dish, Chinese cuisine in sauce, beef au jus, grilled matured or even pheasant meat, a sukiyaki fondue, pan-fried foie gras cutlets ...
It will also surprise you with a good Iberico acorn-fed ham, a creamy bottarga, a tuna mojama.
For dessert, it will accompany roasted pineapple, flambéed bananas, chocolate tart, a pan-fried apple in butter, dried or baked figs, pan-fried or baked raw rippened apricots.
