Ume kosho paste

Ume kosho is a condiment made from ume plum and chili pepper.

The whole is fermented in a marinade of salt and spices and then crushed.
The palate is greedy, fruity, accompanied by elegant acidity and moderate spiciness.

Our perfect pairings : grilled cephalopods and other octopus, grilled red meat, smoked salmon, escalope of foie gras, maki and sushi, hard cheeses, mayonnaise, cold sauces, fried foods.
