Yanai Seimen House celebrated the 100th anniversary of its establishment in 2012.
It has perpetuated the artisanal making of hand-drawn somen since day one.
These master craftsmen do not use vegetable oil.
We recommend tasting them cold, accompanied by a delicious tsuyu.
These artisanal somen, delicate to cook, require the following steps to be observed point by point:
. Bring 2 liters of water to a boil
. Immerse the somen in boiling water
. Stir gently for 2 minutes
. Taste to check the texture
. Remove from the heat and transfer to a colander
. Rinse with very cold water, stirring them gently
. Drain
. Enjoy within 5 minutes of rinsing for optimal flavor and texture.
