Hand-pulled sômen flavored with burdock root

The major ingredients for these sômen are Kumamoto wheat flour, delicious groundwater from Aso, and rare Akou salt.
Our craftsman, Higo Sougawa, is specialized in the making of sômen, udon, hiyamugi, soba, ramen… hand-pulled by hand, favoring selected raw materials of very high quality.

From the kneading of the dough, it takes about two days to complete the twelve steps of manual production.
It is rare to find qualified craftmen with such skills and experience.
The different pastas from Higo Sougawa contribute to the reputation of the town of Kosa (Kumamoto) where they are considered local specialties.

For these sômen, Miyazaki burdock root powder and Kumamoto wheat flour are kneaded together.
These sômen are full of dietary fiber and diffuse the subtle flavor of burdock, with hints of Jerusalem artichoke, after cooking.

 

Our cooking advice : 2 minutes in boiling water.
Tasting is recommended hot.
