This sansho miso is a real favorite. It is very fruity, sansho and the characteristic notes of miso are very present. Salinity is very balanced and natural sugar is present but in no way sickening. Sansho berries have fermented with the miso. It exhales notes of citrus fruits, lemongrass, verbena. Spiciness of sansho is well balanced.

It is made in Ashiya, Hyogo Prefecture, from the best rice and soybeans. Its brownish color is reminiscent of prune flesh.
It can be served with brown sauce or used as a condiment with venison, doe, wild boar, foie gras, veal and poultry, duck breast...
It is a perfect accompaniment to scallops and is suitable for meat and fish marinades.
Dare to use it also in the sweet register : chocolate, strawberries, poached pear...
