Our artisan, Taishoya Shoyu Ten, introduced the first rice shoyu on the market. Shoyu is classically a soy sauce which main ingredients are soy beans and wheat.
Here, the main ingredient is rice!

Shoyu Junmai rice

This shoyu, allergen-free, junmai type (no distilled alcohol added) is made only with sake lees, rice and salt.
Ten long years of research were necessary to create this product rich in flavor.
Sake lees used are from the famous local sake "Tsukiyama" (70% rice polishing rate).
Sea salt is harvested in Shimane and the malted rice is slowly fermented and aged by natural brewing method.
The pressing is done slowly for 3 days, sterilized by burning, and provides the deep aroma derived characteristic of shoyu.

 

Our perfect pairings : we recommend this rice shoyu for sashimi, sushi, tofu, grilled rice balls, fried rice or stir-fried vegetables (in combination with one third of balsamic vinegar).
