Gin Jin Shin on from Shimane
Shin On means "gratitude to the forest".
This dry gin (japanese alcool) captures the fragrance of Shimane's forests. Distillate base is made of barley with a sylvan infusion of kuromoji (Lindera Umbellata, family Lauraceae), wild juniper berries, Japanese cypress, yuzu and cinnamon.
Nose, aroma, is surprisingly smooth, with fresh citrus notes, round and elegant cinnamon, on a complex floral and vegetal bouquet.
Palate is warm, velvety, yuzu citrus well present with slightly resinous accents.
This gin, great vintage, very qualitative, can be tasted alone, on ice or with a lime juice.
It is also remarkable accompanied by tonic or another quality soda.
Several distilleries, in Japan, since about ten years, work to make gins of very great quality and according to artisanal methods.
Our artisan Okadaya Honten is located in Masuda City, Shimane Prefecture, where abandoned farmland is becoming increasingly common.
The distillery is working to reclaim this land by growing yuzu, chestnuts, persimmons and sake rice.
