These somen are handmade, using the same traditional methods for over a century. They are flavored with mekabu.
Somen with wakame root mekabu
Mekabu is the lower part of the wakame seaweed, near the stem.
This mekabu comes from wakame grown and harvested in Naruto Strait, northeast of Shikoku Island, an area of ocean currents where some of the world's largest swirling tides occur.
They grow when they are tossed about by violent tidal currents.
For this reason, Mekabu harvested there are very fleshy and have a strong taste and aroma.
Gustatively, notes are very marine, with accents of sea spray and iodine. They give off a seaside aroma.
These somen have a firm texture and are very rich in dietary fiber. They have a beautiful natural green color characteristic of mekabu.
Our tasting pairings : we recommend to combine them with marinated vegetables, mixed salads, smoked salmon and scallops.
