Hand-making soba has become rare these days. These soba, finely sliced, are pleasant on the palate.

Yanai seimen teyori soba are hand-shaped without using vegetable oil in the dough.
The wheat flour (Australian) and buckwheat flour (Hokkaido), used for its preparation, are very qualitative and tasty.
We favor a cold tasting.
These artisanal soba, delicate to cook, require to respect point by point the following steps:
. Bring 2 liters of water to a boil
. Dip the soba in boiling water
. Stir gently for 4 minutes
. Taste to check the texture
. Remove from the heat and transfer to a colander
. Rinse with very cold water, stirring them gently,
. Drain,
. Enjoy within 5 minutes of rinsing for optimal flavor and texture.
