Daishimochi contains more dietary fiber than white rice or brown rice, and also contains many β-glucans.
At the time of harvest, a pigment called anthocyanin (type of polyphenol), colors the skin of the ears and barley straws in purple. Tatsumi Murasaki soy sauce is characterized by its sweet scent, beautiful color and good taste.
Acidity, roundness, depth, sweetness characterizes this nectar.
It sparkles slightly on the tongue and reminds, through its tannins, the taste notes of great wines.
