Hidaka Kombu seaweed from Hokkaido

Hidaka kombu is as good to eat as it is to make dashi broth.

It is sweet and easy to boil. It is also known as Mitsuishi-kombu. Its length varies from 2 to 7m but its width is much smaller (6 to 15cm) than the other kombu.
The edges are not ruffled. Its color is blackish dark green.

Our perfect combination : boiled, its taste is excellent. It is used in many prepared dishes such as ni kombu, kombu maki or dashi kombu..
