Kuro Rakkyo black Tottori shallot

The Hirooka farm uses the best Tottori shallots to make its black shallots.

They are large and delicately perfumed. Its candied notes are almost balsamic with notes of prunes and apricot. The shallot, macerated simply using heat and humidity, takes on a shiny, black colour, a silky, melting texture, revealing all of its natural sugars.

Perfect combination : this black shallot goes well with dried or smoked fish, carpaccios, foie gras, scallops, and will enhance your canapés and cold dishes
