Japanese panko breadcrumbs are very popular in Japan. they are used to make the famous "tonkatsu" (breaded pork spareribs or loin) or "Ebifry" (prawn fritters) even "kakifry" (breaded oysters).
Panko is composed of petals or flakes of white sandwich loaf. Once cooked it gives a light , very crumbly, crunchy coating.
