Training system: Alberello and Espalier reared with bilateral cordon.
Plant density: 5000 V / Ha
Production / vine: max 1,5-2,0 Kg
Pedoclima: Medium-textured, highly calcareous soil with excellent texture.
Exposure: WEST
VARIETY: Nero d'Avola and small percentages of local vines (Surra, Pignatieddu,
Orisi, Vitrarolo, Niururuossu) to be checked
FIRST VINTAGE: 1994
HARVEST PERIOD: Manual and selective harvesting in the second week of September.
VINIFICATION: After the manual harvest, the grapes are de-stemmed and crushed
fermentation of the must, in contact with the skins, is carried out for
a maximum of forty-eight hours, typical method of the Val di Noto
(quarantuotturi), followed by a soft and progressive pressing with
fractional extractions; use of own yeasts.
AGING: In steel for 8-10 months then in the bottle for about 6/12 months.
